Robiola
Oh, wow! A soft cheese made with goat and sheep milk, with a brie-like consistency, and pungent flavor. Mellow rind. Delicious! I ate this on top of warm kalamata olive bread with a glass of everyday Merlot. Probably not the most official way to taste it, but I was feeling decadent and it was fabulous!
Have since learned there are several varieties of Robiola, so I’m not sure which one I indulged in. I will make a point of getting that right next time.
