Hafod Welsh Organic Cheddar
This Welsh cheddar is produced by Wales’ longest certified organic dairy farm, Bwlchwernen Fawr. According to their website, Hafod (pronounced Havod), means summer place.
I purchased this cheese from Square Deal Wine Company on 23rd in Portland, and had the pleasure of watching the cheese monger cut open a brand new round for me. I wanted a Welsh cheese in particular, and there it was, a large round of cheese just waiting for the cheese wire. So, I can honestly say that despite the many, many miles this cheese has traveled, it was freshly cut. I had no idea that it was organic at the time, so was especially pleased to learn this when doing some research.
The butter-yellow paste was firm, very compact and smelled vaguely of buttered corn. Tasters noted the following flavors: farmyardy, with a nice tangy (bordering on astringent for this taster) tartness. Great cheddar with character. Would be wonderful with a Plowman’s lunch and pickle (Branston, of course!)
