Beechers Marco Polo
Just looking at this cheese piques your interest and its name tells you a great deal. It is named after Marco Polo, the Italian merchant who first brought spices from China back to Europe in the 13th Century. So, right away, you can guess that this cheese is shot through with pepper and other spices. In fact, the cheese is blended with ground green and black peppercorns, according to Beecher’s web site. (Beecher’s recommends using this cheese on a burger, which sounds irresistible.)
The aroma of this soft, springy cheese is decidedly peppery and it really delivered on flavor. It tasted of freshly ground black pepper and was spicy without being overpowering. The peppery flavor hits you first but mellows to a creamy, slightly salty finish. If you like pepper you’ll enjoy this cheese and it certainly makes a nice addition to a cheese plate.
