“Zoots alors, I have missed one!”

I just noticed I don’t have a post for one of my top ten cheeses: Robusto! What a terrible oversight. This is a fantastic Gouda-style cheese full of casein crystals for a wonderful salty, crunchy, sharp flavor. Similar to Parmesan, it is great on it’s own but melts oh so wonderfully for perfect cheesy bread to accompany a salad or bowl of soup.

This is a great snacking cheese, and goes great with a good red wine, or a beer. Love it, love it!
