Beechers No Woman

Well, this looked abit different from the start. This is pale yellow cheese with burgundy-colored ribbons and speckles. Firm and with a very mild cheddar taste and a hint of pepper and spice. I later learned that the red veins in the cheese are Jamaican jerk spices. Which also clued me in to the name, No Woman.   The spice is mild and very enjoyable.

Beechers Flagship Loaf

Nice cheddary-like cheese (OK, I know cheddary is not a word, but it is here). This cheese is buttery in color with a nice salty tang. Texture is smooth and firm. Great everyday cheese. Discovered that this is handmade in Seattle.

Robiola

Oh, wow! A soft cheese made with goat and sheep milk, with a brie-like consistency, and pungent flavor. Mellow rind. Delicious! I ate this on top of warm kalamata olive bread with a glass of everyday Merlot. Probably not the most official way to taste it, but I was feeling decadent and it was fabulous!

Have since learned there are several varieties of Robiola, so I’m not sure which one I indulged in. I will make a point of getting that right next time.

Comte (Gruyère de Comté)

Jarlsberg-like with a nutty,  cheddar-like tang.

Update: Mmm, that’s all I had to say about it I guess?
